Belle's Gelateria : Butter Pecan Ice-Cream

This butter pecan ice-cream is fragrant with toasted pecans. The lovely crunch of the pecans contrast the creaminess of the ice-cream. It is a delightful treat for any season.
Ingredients:
4 tbsp unsalted butter
1 cup pecans
1/2 tsp salt
1 cup whole mlk
1/3 cup sugar
pinch of salt
2 cups heavy cream
1 tbsp vanilla extract
Directions:
1. Melt the butter in a pan.

2. Add the pecans and salt.
3. Cook over medium-low heat until the pecans are golden and toasted. Make sure to stir frequently and watch very carefully as it takes only half a minute for the pecans to go from golden to burnt.
4. Remove pecans from pan, leaving as much of the butter in the pan as possible. Set aside to let cool. The butter can be reused.
5. In a bowl, whisk together milk, sugar, and a pinch of salt until the sugar has dissolved.
6. Stir in the cream and vanilla extract.
7. Cover the bowl with plastic wrap and chill in the refrigerator for at least two hours.
9. Whisk again before churning using the gelato paddle for about 40 minutes.
