Like garam masala; make your own, and rub it on chicken, lamb or use to make a Moroccan 'nasi goreng' ;)
We ground some fresh spices and it smelled amazing. Looks like a lot of spices but it blended pretty well and had a mellow balanced flavor (did that make sense?) Skeptical? Try it out and taste for yourself.

Was great with the chicken but I'll give lamb a go next time. Probably not fish... Then again.. maybe a firm fleshed one pan fried? Hmmm....
Ingredients:
2 tsp ground ginger
2 tsp ground cardamom
2 tsp ground mace
1 tsp cinnamon
1 tsp ground cumin seeds
1 tsp ground allspice
1 tsp ground coriander seeds
1 tsp ground nutmeg
1 tsp turmeric
1/2 tsp ground black pepper
1/2 tsp ground white pepper
1/2 tsp ground cayenne pepper
1/2 tsp paprika powder
1/2 tsp ground anise seed
1/4 tsp ground cloves
1/4 tsp fennel seeds
For a more aromatic result, toast all seeds and then grind together.
