Joy brought a fabulous bottle of eggnog and for the life of me, can't manage to drink any amount of it straight up. Just a tad too heavy.
Eggnog bundt? Eggnog waffles? All my searches in the last 24 hours were eggnog recipes. And though I have to get to work this afternoon, I wanted a big hearty breakfast so it was Eggnog Pancakes. It was also because the waffle recipe was a tad too tedious.. hahaha.
I thought the eggnog content was spot on, and tweaked the original recipe to include the oat flour and pecans and I'll never look back.
1-1/2 cups unbleached flour
1/2 cup oat flour
1tbsp baking powder
Pinch of salt
2 eggs, lightly beaten
2 cups eggnog (I used 1 cup and subbed the other cup with milk)
1/4 cup cooking oil

2. Another - the wet.
3. Stir wet into dry. It will be slightly lumpy.
4. Heat a griddle or heavy skillet, then grease with butter (what else?)

5. Ladle the thick batter and cover, cooking on medium heat. When bubbly on the top side, flip and cook a further minute.
To serve, top with some pecans, sprinkle some icing sugar, drizzle with honey or maple syrup and dig in...
