Appled Pancakes

When I started making these fabulous apple pancakes many many years ago, they were a way to sneak in fruits into breakfast for the kids. Now, I don't need to sneak produce in food for my teen kids to enjoy, I incorporate them into meals to healthify them. So there!


My kids really enjoy them. My husband, who doesn't care for cooked apples, er, didn't. That won't deter me from making them again, though. That will, however, remind me to make him another batch sans apples ;)



This recipe is adapted from Smitten Kitchen's apple pancakes and makes 18 medium sized pancakes. You can refrigerate what you can't finish and heat them up in the griddle the next day. Seriously, who doesn't love instant breakfast?

Ingredients:
3 eggs, well beaten
350 ml (1-1/2 cups) milk
175 ml (3/4 cup) yogurt
375 g (3 cups) all-purpose flour
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
2 tsp baking powder
Pinch of salt
100 g (1/2 cup) sugar
5 medium apples, cored, peeled and blitzed in the processor

Directions:
1. Hand whisk the eggs with the milk or yogurt in a large bowl.
2. In a smaller bowl, whisk the flour, spices, baking powder, salt and sugar together.
3. Combine the wet and the dry ingredients and stir in the apples.

4. Butter a warmed non stick pan over medium heat.
5. Drop a ladle full of batter and spread it out a bit.
You know the rest....

Enjoy with a dusting of icing sugar, honey, more apple chunks, or a dollop of ice cream!
