The markets are abound with blueberries and it's about to go out of season. Gotta make the best of it. After all the muffins and loaves have been tried, a light and fruity bar is in order. And this recipe delivered.
Light, refreshing and goes really well with the iced tea that will accompany this beautiful fruity bar.
Ingredients:
3 cups flour
1 cup white sugar
1 tsp baking powder
1/4 tsp salt
Zest of 1 lemon
1 egg
1 cup (2 sticks) unsalted butter, cold
Juice of 1 lemon
1/2 cup white sugar
4 tsp cornstarch
4 cups blueberries, fresh
Directions:
1. Preheat oven to 375ºF and grease a 9x13-inch baking sheet.
2. In a bowl, sift the flour, sugar, and baking powder, together.
3. Mix in the salt and the zest.
4. Combine the egg and butter in with a fork until the dough forms a crumbly mass.
5. Place half of the dough mixture on the baking sheet and pat it down.
6. To make the blueberry filling, start by stirring the the lemon juice, sugar, and cornstarch.
7. Add in the blueberries and gently stir to lightly coat the blueberries.
8. Place the blueberry filling on top of the dough on the baking sheet and spread as evenly as possible.
9. On top of that, crumble the rest of the dough.
10. Bake for 45 minutes until the crumble starts to brown.
11. Be sure it is cool before cutting into rectangles.
