Financiers aux Framboises - Raspberry Financiers

Financiers, though sounding 'fancy' are deceptively simple to make. One needs not any electrical appliance and a few seconds of vigorous whisking will suffice to make this fabulous tea time treat. The not-so-secret ingredient here is beurre noisette, or browned butter. This produces a flavourful and nutty aroma that could potentially make any butter-laden treat exponentially extraordinary.
These beautiful treats honestly take less than half an hour from start to finish. I can't believe I've never made them before. The kids loved them, then threatened to gift me authentic financier moulds so I would be reminded to make them again and again. Sadly, I give in much too easily ;)
Ingredients:
130 g butter, browned* and cooled
100 g (1/2 cup + 2 tbsp) sugar
100 g (1 cup) almond meal
50 g (1/3 cup) flour
1 tsp honey1 tsp vanilla extract
5 egg whites, whisked
24 fresh raspberries, washed and dried
To brown butter: place butter in a heavy bottomed saucepan and heat on medium high until solids particles start separating from the liquid and the butter turns a deep shade of brown on the bottom while the top remains a golden colour. Be watchful that the butter doesn't burn. Swirl the pan now and then so the solids don't stick to the bottom.
Directions:
1. Preheat the oven to 375F. Butter and flour 2 mini muffin pans.
Alternatively place the financier batter in mini baking cups (made of thicker paper)
2. In a medium bowl, whisk the sugar, almond meal and flour together.
3. Make a well in the centre and pour the honey, vanilla extract and the egg whites. Whisk vigorously to combine.
4. Whisk in the cooled browned butter.
5. Scoop batter into the muffin pan or baking cups, filling it to 2/3 of the cavity.
6. Gently place a raspberry in the middle of each, sinking it halfway into the batter.
7. Bake for 10 - 12 minutes until golden and springs back to touch.
8. Cool in the pan for 5 minutes before inverting it out of the pan to cool completely.
