Cauliflower Pizza Crust

Guess what this crust is made out of? Okay, the title of the post gives it away ... Cauliflower !!! This delicious pizza is made with a cauliflower crust ... and yep! that means it's glutenfree !!! Can't believe it actually tastes so good!



It's amazing to see how this humble vegetable now takes center stage in replacing our beloved carbs to something more nutritious and waistline-friendly. I did a cauliflower fried rice too, and it was like ... nobody noticed that it wasn't rice. Next up ... cauliflower muffins!


It's super easy, super healthy, and super delicious, you won't miss the bready crust (for sometime, at least!). So do yourself a favour and make this your next pizza. You can thank me later ;)

Ingredients:
1 large head of cauliflower (about 3-4 cups of cauliflower rice)
2 eggs
1 cup grated cheddar cheese (or Colby Jack, or any semi-firm cheese)
1 tsp dried oregano
1/2 tsp salt

Directions:
1. Pulverize the raw cauliflower in the blender to get 2 cups of cauliflower 'rice' (bread crumb sized)
2. Spread it out in a parchment lined pan.
3. Bake in a preheated 350F oven for 15 minutes.

4. Let cool, then add the eggs, cheese, oregano and salt.
5. Mix well.
6. In that same parchment-lined baking sheet, shape the dough into a crust, or two.
7. Bake for 20 minutes each side or until golden brown.

8. Let cool to lukewarm before topping with sauce and more cheese and veggies.
9. Broil on high (keep watching) for 3 to 4 minutes.

10. Maybe pile on some salad greens like I did.
11. Take a picture, take a bite, then let me know how it went.
