Cheesy Bean Dip

Arriba! Andale! It's Cinco de Mayo!
Since it's the middle of the week, we need something quick, easy and yet satisfying. Easy! Anything that involves tortilla chips and salsa usually does the trick.
Fresh guacamole - check!
Yogurt instead of sour cream - check!
Salsas ranging from hot to fiery - check!
Hot sauce - check!
Now we need something gooey and chunky to coat the tortilla chips and this cheesy bean dip would do the trick. I passed up on the seven layer dip and decided to make my own layered delight.

And it's nothing more than a layers of black beans, montery and colby jacks, topped with taco seasoning and a generous sprinkling of crushed red pepper flakes.
Into the oven at 350F for 20 minutes.
