Belle's Gelateria : Vanilla Bean Ice-Cream

This scrumptious recipe uses a custard base and it's rich and very satisfying. Really wonderful vanilla flavours from the beans and of course, from our home made vanilla extract. Enjoy as it is or with a drizzle of chocolate ganache.

This quantity will be too much for the ice cream machine to handle for just one batch. Make it in 2 batches and enjoy!

Ingredients:
For the saucepan:
2-1/2 cups milk
2-1/2 cups cream
1/4 cup sugar
5 vanilla beans, slit and scraped
pinch of salt

For the bowl:
6 egg yolks
1/4 cup sugar

For later:
2 teaspoons vanilla extract
Ice & cold water (for ice-bath)


Directions:
1. In a saucepan, heat up the milk, cream, sugar, and vanilla beans until it’s just about to boil. While waiting for that to heat up, move on to step 2. Just make sure to stir it now and then.
2. In a medium-sized bowl, beat the sugar and egg yolks until it’s thick and pale in colour.
3. Remove the vanilla beans from the saucepan, scrape the insides out again and add it to the saucepan (Don’t you dare you skip this step and let the goodness go to waste!)

4. Pour 1/3 of the saucepan mixture to the bowl and beat it.
5. Pour another 1/3 of the mixture into the bowl and beat it again.
6. Pour what’s in the bowl to the saucepan and stir until it lightly coats the ladle. Do not boil. Make sure the saucepan mixture isn’t too hot because it will curdle and that will ruin everything. Mother knows this from experience. 

7. Add the vanilla extract.
8. Pour the saucepan mixture back it into the bowl.
9. Bring the temperature down by floating the bowl on an ice bath.
10. Strain the custard before refrigerating 2 long hours before it’s ready for the ice-cream maker.
11. Pour in the ice-cream maker, tap start, and wait for an agonizing 45 minutes before it’s ready.
12. Enjoy the soft, creamy, and oh-so-delicious vanilla bean ice-cream!
