Minnie & Mickey Chocolate Mousse
Saturday, October 08, 2011I really love this pair ... if you're not Disney inclined, serve in individual martini glasses with a dollop of cream and chocolate shavings on top, perhaps. Or piped in champagne glasses for a romantic evening ... Or espresso mugs for an intimate gathering.
Where ever it lands, this mousse is amazing. Please start with the best quality chocolate
Ingredients:
320 grams dark chocolate shavings (from a 70-80% bar)
6 eggs, separated
60 grams (1/2 stick) butter
60 grams (1/4 cup) sugar
1/2 tsp cream of tartar
Directions:
1. In a bain marie, melt the chocolate with the butter in a medium bowl
2. In a stand mixer, whip the egg whites with cream of tartar until stiff.
3. To the chocolate bowl, slowly add the sugar and then the egg yolks, one by one, mixing after each addition.
4. Lightly fold the egg whites into the chocolate mixture.
5. Spoon or pipe into your show piece receptacles.
6. Refrigerate for at least 6 hours or overnight.
Serve with cream, chocolate shavings, raspberries, or maybe all of them.
