Oatmeal Chocolate Chip Cookies

Plus, the flaxseed and walnuts make it heart-healthy.
G's favorite .. keeps on asking for more.
Ingredients:
1 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/4 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
2 cups old fashioned rolled oats
1 cup dark chocolate chips
1 cup chopped walnuts
1/2 cup flaxseed meal
Directions:
1. Preheat oven to 365F or 165C. Line 2 baking sheets with wax or parchment paper.
2. In a medium bowl, sift together the flour, baking soda and salt.
3. In a large bowl, cream butter and sugars together. Beat in eggs, one at a time, then add the vanilla.
4. Stir in dry ingredients into batter until blended.
5. Mix in the oats, walnuts, chocolate chips and flaxseed meal.
6. Scoop batter with a cookie dropper, drop into baking sheets.
7. Bake for 10-12 minutes.
8. Rest in baking sheet for 3 minutes, then transfer to a wire rack to cool completely.
Makes about 50 crunchy cookies
