Banana Chocolate Muffins

Another yummy creation, this time by Belle. We were waiting for the bananas to turn a bit ripe for this treat, hoping of course, no one will snag them ;) A few times, we actually have to 'hide' them somewhere. LOL! An easy peasy recipe, quick and simple, and if you're up for a bit of elbow grease, no electric appliance required. Besides the oven, at least. 


This recipe makes 20-24 moist and delectable muffins, enough for sharing! My kids love to bring these portable snacks to school. Makes great tea time treats as well.



Ingredients:
3-1/2 cups all purpose flour
1 cup granulated sugar
2 tsps baking powder
2 tsps baking soda
1 tsp salt
2 eggs
1 cup vegetable oil
1 cup plain or banana yogurt
2 tsps vanilla extract
2 cups (4-5 whole) mashed ripe bananas
1-1/2 cups dark chocolate chunks

Directions:
1. Preheat oven to 350 F, then line 2 muffin pans with paper cases.
2. In a medium bowl, whisk the flour, sugar, baking powder, baking soda and salt together to combine.
3. In another larger bowl, whisk the egg, oil, yogurt and vanilla. Sure, you can use the same whisk.
4. Stir dry ingredients into wet ingredients until just incorporated.
5. Fold in bananas and chocolate chips.
6. Fill paper cases two-thirds full.
7. Bake for 20-25 minutes, rotating them when risen, until a toothpick comes out clean.
8. Let it rest for 5 minutes before removing from pans to wire racks to cool.
