Earl Grey and Matcha Madeleines

A beautiful part of our Mother's Day high tea, these madeleines are airy, yet moist. Baked enough to produce a slightly crunchier texture on the outside, it is nothing short of glorious. In addition to the texture, the unexpected flavours of matcha and earl grey makes them irresistible.




Ingredients:
180 grams flour
5 grams baking powder
Zest of 1 lemon
170 g sugar
Pinch of salt
4 large eggs
10 grams honey
200 grams butter, melted and cooled

Note: instead of using the zest of 1 lemon, you may use two teabags of earl grey leaves for Earl Grey Madeleines or two tablespoons of matcha powder for Matcha (Green Tea) Madeleines.

Directions:
1. Mix flour, baking powder, lemon (or earl grey or matcha), sugar, and salt in a large bowl.
2. Make a well in the center of the dry ingredients, then add eggs and honey and whisk to blend.
3. Whisk in the butter gently until incorporated.

4. Cover with plastic and refrigerate overnight.

5. Preheat oven to 375ºF.
6. Butter and flour two madeleine pans.
7. Fill each madeleine cavity 3/4 full.

8. Place pans into oven, reduce temperature to 325ºF.
9. Bake for 12-14 minutes until crowned in centre and slightly browned at the edges.
10. Invert madeleine pan with kitchen towel over cooling rack.
