Oatmeal Walnut Waffles

Happy Father's Day to the man of the house and partner in crime ... the guy astute enough to figure out that even though he had asked for waffles, I would somehow find something new to make so I could blog and IG it! No wonder I married you.



No, but seriously, he enjoys anything and everything nutty and I thought the waffles should be just so. I can't help it if I can have the cake, er ...waffle, and eat, er ... blog, about it too, now can I? That is entirely coincidental. Fate, if you must ;)


Oh, and these oatmeal walnut waffles were awesome too! Even though he would've been happy with the same old, same old don't-mess-with-my-Belgian kind. Sorry, not sorry, babe :D

Ingredients:
180 g (1-1/2 cups) all purpose flour
2 tsp baking powder
1/2 tsp salt
2 large eggs
480 ml (2 cups) milk
55 g (1/4 cup) butter, melted
2 tbsp honey
100 g (1 cup) quick cooking oats
120 g (1 cup) toasted walnuts, chopped

Directions:
1. Preheat your waffle iron and butter the surface.
2. In a large bowl, whisk together the flour, baking powder, and salt.
3. In a medium bowl, whisk together the eggs, then add the milk, melted butter, and honey.

4. Pour the wet ingredients to the dry ingredients bowl, mix until just combined.
5. Stir in the oatmeal and the nuts.
6. Ladle the batter on to the waffle maker and wait for the beep.
7. Stack, sprinkle some walnuts on top, and serve.
