Chia Seed Pudding

It was high time to get on the Chia bandwagon. With all the benefits attached to it, the amazing Chia has a permanent spot on my shelf next to hemp hearts, flax seeds, quinoa and other great grains. Yep, my shelf resembles a mini Costco aisle ;)


For something so teeny tiny, chia seeds packs a punch in nutrients, they are high in fibre, protein, and Omega-3 Fatty Acids. So there's no denying you should be incorporating them in your meals. Besides adding them to my cookies here, adding them to curries (yes!) and stews, making pudding is one of the easiest and delicious way to have them.


It makes for a super healthy dessert. And the best part is ... this Chia Seed Pudding is a versatile recipe. Make it vanilla, chocolate, matcha maybe? And the toppings are endless ... fresh fruit, dried fruit, nuts, mint, chocolate chips.

Here, we made them in jars for single serves, super cute and portable too.

Ingredients:
1/3 cup chia seeds
1-1/2 cups milk
1/4 cup cacao for chocolate (optional)
3 tbsp honey (or more if you like it a little sweeter)
1/2 tsp vanilla extract

Directions:
1. In a bowl, whisk all the ingredients, making sure that there are no clumps in the mixture.
2. Refrigerate overnight, but make sure to stir the mixture at least twice so that the cocoa powder doesn't settle at the bottom.
3. (Optional) If you prefer a creamier and more consistent texture, blend the mixture, scraping down the sides to ensure consistency.
4. Top and serve.
