Apple & Peach Crumb Bars

This warm weather calls for light desserts and tea time treats. Something fruity would be nice, a fruit in season will be ideal.



These apple and peach crumb bars are perfect for the occasion and I am really liking the crumbly streusel topping because the dry and crunchy texture balances the wet and gooey filling. Oh, and did I mention the moist and decadent base everything is resting on?


Ingredients:
Dough:
4 cups all-purpose flour
1-1/2 cup granulated sugar
1-1/2 tsp baking powder
1/4 tsp salt
1-1/2 cup unsalted butter, cold
1 egg, lightly beaten

Filling:
4 peaches, peeled and sliced
3 apples, peeled and sliced
2 tbsp lemon juice
1/2 cup all-purpose flour
1 cup granulated sugar
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Directions:
1. Preheat the oven to 375 degrees F. Grease a 9x13-inch baking pan.

Dough:
2. In a medium bowl whisk together the flour, sugar, baking powder and salt.
3. Use a pastry blender to cut in the butter, and then add in the egg. The dough will be crumbly.
4. Pat half of the dough into the prepared pan.
5. Place the pan and the remainder of the dough in the refrigerator while you prepare the filling.

Filling:
6. Place the apples and peaches in a large bowl and sprinkle with lemon juice. Mix gently.
7. In a separate small bowl whisk together the flour, sugar, salt, cinnamon and nutmeg.
8. Pour over the peaches and mix gently.

Assemby:
9. Spread the peach mixture evenly over the crust.
10. Crumble the remaining dough over the peach layer.

11. Bake in the preheated oven for 45 minutes, or until the top is slightly brown.
12. Cool completely before cutting into squares.

Enjoy with your favorite cuppa or a scoop of vanilla ice cream.
