Banana Walnut Loaf
Saturday, April 05, 2014Great with afternoon coffee, this wholesome loaf is surprisingly satisfying, even in the absence of the ubiquitous chocolate chip! It actually looks better than the ones I see at Costco.
I ran out of walnuts for the second loaf :( The recipe below makes one loaf, but please, like me, just double up. Slice and wrap in serran wrap, freeze, and you will have many tea time treats. And please, make sure you have enough walnuts!
Ingredients:
1-1/2 cup flour
1 tsp baking soda
1/2 tsp salt
1/c cup butter at room temp
3/4 cup sugar
2 eggs at room temp.
1 tsp vanilla
3 mashed bananas
3/4 cup toasted walnuts
Directions:
1. Sift together flour, baking soda and salt.
2. In a stand mixer, cream together butter and sugar until fluffy.
3. You can start preheating your oven to 350F.
4. Butter a 9x5 loaf pan.
5. To the butter and sugar mixture, add eggs, one at a time, then the vanilla.
6. Add mashed bananas on low speed.
7. With a wooden spoon, fold in flour mixture, then nuts.
8. Pour batter into the loaf pan and bake for 50 - 55 minutes, until a skewer comes out clean.
9. Cool on a wire rack, slice and wrap in plastic, and if it survives, it's even better the next day.
