One of my favourite recipes, here it is. . .

Makes 2 medium-sized pastries, one to share.

2 pastry sheets, frozen left out at room temperature
60 grams butter, softened
80 grams almonds, grounded
65 grams sugar
2 eggs + 1 for egg wash
1 tsp vanilla extract
4 peaches (or 4 cups of blueberries)

1. Beat the butter with the sugar until a smooth paste.
2. Lightly whisk the eggs, then stir in the almonds and vanilla extract.
3. Unroll the pastry onto the baking tray.
4. Lay a line of peaches in the middle of the pastry and place the almond mixture atop it.
5. Make stripes on each end to cover the filling.
6. Egg wash the pastries and sprinkle with brown sugar.
7. Bake in the oven at 350 F until the pastry turns golden brown.
