Ebelskivers - Danish Puff Pancakes

We had a really nice lunch, Malay Fish Curry, and was too full to think about dessert. Yet I craved something sweet after all that heat and spice.
Now I have been eyeing the poffertjes pan for weeks now and waiting for the time to make them. So I checked the recipe. Yikes.. no can do, we couldn't afford the time to wait for the yeast to rise. So it was ebelskivers. Why? Coz it is a simple batter made with baking powder, and it will be quick.
Ingredients:
1-3/4 cups flour
3/4 tsp baking soda
1 tsp baking powder
1/2 cup sugar
pinch of salt
3 eggs, separated
1-3/4 cups buttermilk (milk & vinegar)
2 tbsp (1/4 stick) unsalted butter, melted, for brushing on the pan
icing sugar, for dusting
Directions:
1. In a bowl, whisk together all the dry ingredients.
2. In another smaller bowl, whisk together the egg yolks and buttermilk.

3. Whisk this into the flour, yes.. it will be lumpy.
4. In another clean bowl, whisk with a mixer, the egg whites until stiff but not dry.
5. Fold the egg whites into the batter in two additions.
6. Heat the pan on medium heat and brush with the melted butter.
7. When sizzling, fill the cavity with batter till 3/4 full.
Or fill a 1/4 way, add some fruit (blueberries will do well), top with more batter till 3/4 full.
8. Using 2 wooden skewers, flip the ebelskivers over and cook until golden brown.
9. Serve immediately with a dusting of icing sugar
