Sindhi Chicken Seyal - Chicken Curry

A house favorite, chicken seyal is best enjoyed with chapatti or parathas, with mango chutney and papaar, aahhh ... my mouth's watering already.


Ingredients:
1/4 cup vegetable oil
2 cups fresh shallots, thinly sliced or the same amount of fried shallots
3 cloves garlic, sliced
3 cm cut of ginger, sliced
8 pcs chicken drumsticks or thighs, scored
1 tsp ground coriander
1 tsp cumin powder
1/2 tsp garam masala
4 tomatoes, chopped
1 cup water
Bunch of coriander leaves

Directions:
1. Heat oil in the pan, then fry the fresh shallots until browned, stirring constantly so as not to burn them
If using fried shallots, a tablespoon of oil will do, just swirl around to heat
2. Then add garlic and ginger, stir until aromas are released
3. Add the chicken pieces, followed with ground spices, tomatoes and water, cover and cook till chicken is done.
4. Serve with a generous sprinkling of fresh coriander leaves
