Fabulously Fluffy Vegan Pancakes

Pancake porn at my finest attempt :D - didn't even need the ubiquitous drip of a sweetener!


and OMG! It's vegan! Need I say more?

Ingredients:
250 g (2 cups) all purpose flour
1 tbsp granulated sugar
2 tsp baking powder
1 tsp baking soda
pinch of salt
120 ml (1/2 cup) unsweetened applesauce
1 tsp vanilla extract
2 tbsp vegetable oil
360 ml (1-1/2 cups) almond milk. at room temperature.
2 tbsp apple cider vinegar

Directions:
1. Combine the almond milk and vinegar to make a non-dairy buttermilk, of sorts. Let rest for a few minutes until it separates. 
2. Whisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
3. In a medium bowl, whisk together the applesauce, vanilla, oil and the prepared non-dairy buttermilk.
4. Make a well in the centre of the dry ingredients, pour the wet into it, whisk until just combined and no visible lumps of flour remain.
5. Cook on a buttered cast iron pan for best results.
