Peanut Butter French Toast

A decade ago, we were in Singapore and our favourite place to hang out was at the Borders bookstore on Wheelock Place, Orchard Road. (The largest bookstore there at the time.) Across the street from Borders, we stumbled upon a small café.
We went there for brunch and ordered various dishes. As we waited for our food, we saw every other dish that left the kitchen was the same and found out their speciality was a double-decker French Toast with peanut butter sandwiched in the middle.
So then we ordered two and devoured it! We ordered another one. Gone. Another came along. Gone. By this time, the waitress and the chef realized how much we loved it and they created a special triple decker french toast for us. Gone. And gone. Oh, we were so full of french toast and happiness!

Years later, M&D went back to Singapore and the café across Borders (we never remembered the name of the place) had closed down. And a couple years later, so did Borders. :'(

Perfect for breakfast/brunch! Here's our recipe that serves 4 hungry human beings:

INGREDIENTS
For the egg mixture
2 tsp ground cinnamon
1/3 tsp ground nutmeg
1 tbsp sugar
4 eggs
2/3 cup milk
1 tbsp vanilla extract
4 tbsp butter (melted)
For the peanut butter sandwich
8 slices of bread
Peanut butter

For the finishing touches
2 bananas
A bit of honey
A bit of icing sugar

DIRECTIONS
1) Combine the ingredients for the egg mixture in a small bowl. Whisk.
2) Create the peanut butter sandwiches. Michelle suggests to lightly spread peanut butter onto your slices of bread. Michael generously slathers peanut butter onto the slices of bread.
Michelle doesn't want diabetes.
Michael thinks he doesn't have to think about it now.
3) Dunk the sandwich in the egg mixture.
4) Put it in a panini press, non-stick fry pan, or wherever you make your pancake. (We put ours in our Croquade Belgian waffle maker with the fruit-filled waffle plate.)
5) When it's golden brown, serve with a bit of honey and/or icing sugar – and don't forget to add bananas because it will look good for the photos we're healthy!
