Indian Cauliflower 'Rice'

Cauliflower - fast turning out to be 'the' vegetable of this year. Cauliflower fried rice, cauliflower pizza crust, cauliflower wings, cauliflower steak ... yes, steak!



They're calling cauliflower for President, I've heard! But seriously, for some of us who are watching our carb intake and trying to replace white rice, cauliflower is a saviour. You really can substitute the texture, the function (to sop up the gravy), and the satiety, of eating rice with this humble and versatile vegetable.


Ingredients:
1 head of cauliflower, chopped into chunks
2 tbsp vegetable oil
4 bay leaves
1 tbsp cumin seeds
1 inch cinnamon stick
4 cloves
2 green cardamom
1 tsp ghee
salt, to taste

Directions:
1. Process the cauliflower head, florets and stems, in a food processor until it resembles 'rice' or coarse crumbs.
2. In a heavy bottomed skillet, heat the vegetable oil, then add the bay leaves, cumin seeds, cinnamon, cloves and cardamom, stirring until fragrant. 
3. Add the cauliflower rice and 'stir-fry' until golden and the flavour of the spices have infused into the rice.
4. Add a little salt and a bit of ghee to give it that extra oomph.
5. Remove the cinnamon, cloves, and cardamom if you can find it.
6. Serve hot with your favourite curry.
