Cumin Roasted Carrots

You know that oversized bunch of carrots from Costco? All good things come into being from that humble humongous pack ... carrot cake, walnut carrot cake, pecan carrot cake, carrot cake with cream cheese frosting ... okay, okay ... that's not all what carrots are for at home.

Most of them go into our multitude of curries and stir fries and down the juicer chute. But now we're chalking this one to the board ... because it is so awesome, and super duper easy to put together!



This will be a no-recipe recipe. How? Because I'll just ramble a bit about it and you can wing it from there ;) The online cooking savants are now coming up with 'How to make yadayadayada without a recipe' and I figured, so can I. Besides, aren't pictures worth a thousand words?

Behold the sliced onion, caramelized to perfection ...
... the carrots, evenly sliced in the diagonal, tender from the olive oil drizzle ...
... the subtle spices of cumin, coriander, garam masala, chili flakes, salt and pepper, speckled on these juicy root veggies and slightly charred on the parchment paper lining ...
... it is a beauty ... after a brief (45 minutes) stint in the oven, of course.

And there you have it ... a no-recipe recipe. A delicious, aromatic side to any meal, fragrant with earthy Indian spices, which goes well with curry and rice, or with greens and yogurt in a wrap.

Just a tip ... more cumin, less of coriander and garam masala ;)
