Rice Cooker Chocolate Cake

Saturday, April 09, 2011

I had no place to bake these last few months... but that didn't rain on my parade. I found that rice cookers can manage a simple pound-like cake and I tried at least 8 different takes on the regular recipes.

Finally settled on this one.

Ingredients:
100 g softened butter
100 g icing sugar
3 eggs
80 g flour
20 g cocoa
1 tsp baking powder
1 tsp vanilla extract
1 tbsp milk

Directions:
1. Sift the flour, cocoa and baking powder together
2. Cream butter and icing sugar in a mixer till light and fluffy
3. Add the eggs, one at a time, then the vanilla and milk, with the mixer on low
4. Turn off the mixer and fold in the dry ingredients
5. Pour into a greased, not floured, rice cooker insert
6. Press the 'cake' option and wait for the beep.

No oven.. no worries!
