Oven Fried Crispy Chicken

Want crisp? Get the cereal, not the fry pan!
What a treat, the crunchy goodness of fried chicken, and the healthful benefits of bran flakes! Plus, using buttermilk or even yogurt to marinate the breasts made it so tender, we saved some more calories by not using the dark meat. A re-invention of a classic, I think!


Ingredients:
3 lbs chicken pieces, I prefer breasts
1 egg
1 cup yogurt or buttermilk
1 cup flour (seasoned with salt, pepper, garlic and onion powders)
2 cups crushed cereal (bran, or high fiber to amp it up)
Olive oil spray to coat

Directions:
1. In a medium bowl, beat the egg with the buttermilk or yogurt, then add the flour, mix till smooth.
2. Dip chicken in the batter, then coat with cereal.
3. Place in a baking pan lined with foil and spray on the olive oil to coat both sides.
4. Bake at 350F for about 45 minutes to 1 hour depending on quantity and thickness of meat, until no longer pink.
